At least 500 times in my life, I have been asked, "Where can I get some good Italian food?"
My answer is always the same, "Make friends with me and ask me to invite you to my house for dinner."
My grandmother taught me how to make it over 30 years ago, and I have been making it ever since.
The only place you can get homeade spaghetti sauce that is the real, authentic, Italian way is from the kitchen of an Italian.
Every Italian knows the secret, and I am about to share it with you.
Well, the title has given this away, but the ingredient is oregano.
While oregano is a popular spice known for its robust, earthy flavor and aromatic qualities, it has a potent taste that can easily overpower other ingredients in the sauce. Some people may have allergies to oregano that could potentially cause adverse reactions.
Certain dishes may simply not benefit from the addition of oregano due to its taste clashing with the overall flavor you are looking for, and spaghetti sauce is one of those dishes.
Finallly, most people associate spaaghetti sauce with heartburn and indigestion. The reasaon for this is, guess what? Oregano!
Now, let's solve the other half. The ingredient you do want to use is sweet basil, also know as, just plain basil.
Every Italian knows this, and to them, using oregano instead of sweet basil is very close to one of the seven deadly sins! (Well, not really, but they think it is not a good thing to do.)
Sweet basil has a slightly sweeter flavor compared to the robust taste of oregano.
The bright green leaves of sweet basil can also add a color to your sauce, making it look good. Also, sweet basil goes well with the tomatoes, garlic, and onions in the sauce, giving it a taste that is truly, and honest to goodness, Italian.
Finally, sweet basil will not give you heartburn or indigestion.
You can find sweet basil in the store, and it is very inexpensive (about $1). However, most Italians grow their own, and just pick it from their gardens when they need it.
If you make this homemade spaghetti sauce, and have a lot left over, you can use it to make a homemade pizza, which I will show you in a future article.
Unlike spaghetti sauce, oregano works well in pizza sauce. So, in this case, you might want to add some oregano if you use the sauce for pizza.
Oregano is good in pizza sauce, but not in spaghetti sauce.
